Five kilos of fresh fruit, one kilo dried
Fresh mulberries are about 80% water by weight. Drying in the heat of the summer months, in the sun and the wind, takes nearly all of it away: roughly five kilos of fresh fruit yield one kilo dried. That is why the sweetness is so concentrated.
Once drying is finished the fruit comes in to our plant, where it is fumigated, cleaned and packed. It is then prepared to whatever packaging and grammage you ask for.
